- In a mixing bowl, combine softened cream cheese and crumbled feta. Stir in chopped cranberries and parsley, then season with salt, pepper, and honey if desired until well-mixed.
- Lay a tortilla flat on your workspace. Generously spread about 1/4 of the creamy mixture evenly across the tortilla, leaving about 1/2 inch from the edges for easy rolling.
- Starting from one edge, carefully roll the tortilla tightly into a log shape.
- Place your wrapped pinwheels in the refrigerator for at least 30 minutes.
- Once chilled, unwrap the tortillas and slice each roll into 1/2-inch rounds.
- Arrange these colorful pinwheels on a platter, and serve immediately or store in the fridge until ready.
