  • 2 large Eggs Acts as a binding agent; remember to let excess egg drip off.
For the Coating
  • 1 cup Grated Romano Cheese Adds rich, savory flavor; substitute with Parmesan if Romano is unavailable.
  • 1 cup Breadcrumbs Italian-style breadcrumbs are best, but plain ones will do.
  • 1/2 cup All-Purpose Flour Helps the breading stick; gluten-free options like almond flour work too.
  • 1 teaspoon Garlic Powder Enhances the flavor; fresh minced garlic can add a punch.
  • 1 teaspoon Dried Oregano Imparts Mediterranean essence; try Italian seasoning if needed.
  • 1 teaspoon Salt Essential for flavor; adjust according to dietary needs.
  • 1 teaspoon Black Pepper Adds a touch of warmth and depth; freshly ground is always preferred.

  • 1/4 cup Olive Oil Necessary for frying and adds flavor; canola or avocado oil can be used for a neutral taste.
For Garnish

Equipment

  • Skillet
  • Baking Sheet
  • plastic wrap
  • Parchment paper
  • Shallow Bowls

Method

Cooking Instructions
  1. Start by preheating your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.
  2. Place your boneless, skinless chicken breasts between layers of plastic wrap. Gently pound them to about 1/2 inch thickness.
  3. In three shallow bowls, set up your breading station. Fill one with flour, another with beaten eggs, and the third with a mixture of breadcrumbs, Romano cheese, garlic powder, oregano, salt, and pepper.
  4. Dredge each chicken breast in the flour, shaking off any excess, then dip it into the beaten eggs before pressing it into the breadcrumb mixture.
  5. In a large skillet, heat a drizzle of olive oil over medium heat. Fry each chicken breast for 3-4 minutes on each side until they turn golden brown and crispy.
  6. After frying, transfer the browned chicken onto your prepared baking sheet and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Once done, let the chicken rest for a few minutes and sprinkle with fresh parsley if desired.
  8. Serve with a slice of lemon to brighten up the flavors!
