  • 1 cup Grated Parmesan Cheese Use freshly grated for optimal taste.
  • 3 large Egg Yolks Use fresh eggs for the finest results.
  • 1 teaspoon Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
For Cooking and Garnish
  • 2 tablespoons Olive Oil For cooking the bacon.
  • 2 tablespoons Chopped Fresh Parsley For garnish.
  • 1/2 cup Extra Grated Parmesan Cheese For serving.

Method
 

Cooking Instructions
  1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add your choice of pasta and cook according to package instructions until al dente, about 10-12 minutes. Don't forget to reserve 1 cup of pasta water before draining!
  2. Cook the Bacon: In a large frying pan, heat a drizzle of olive oil over medium heat. Add the diced bacon and sauté until crispy, about 5 minutes.
  3. Sauté Garlic: Add the minced garlic to the frying pan and sauté for an additional minute until fragrant.
  4. Mix the Sauce: In a separate bowl, whisk together the heavy cream, grated Parmesan cheese, and egg yolks. Season this mixture with salt and pepper.
  5. Combine Cream and Pasta: Lower the heat on the frying pan to low. Pour in the cream mixture while stirring continuously to coat the bacon.
  6. Toss with Pasta: Gently add the cooked pasta to the creamy sauce in the frying pan. Toss until coated.
  7. Serve and Garnish: Serve immediately, garnished with chopped parsley and extra Parmesan cheese.
