Ingredients

  • 8 ounces skinless boneless chicken thighs or breasts cut into bite-size pieces

For the Base
  • 1 tablespoon olive oil for searing the chicken
  • 2 tablespoons butter enriches the soup
  • 8 ounces mushrooms sliced cremini, baby bella, or mixed
  • 1 small onion diced
  • 2-3 cloves garlic minced
  • ½ teaspoon fresh thyme or dried thyme
For the Liquid
  • ½ cup dry white wine optional, substitute broth if preferred
  • 4 cups chicken broth the foundation of the soup
For the Creaminess
  • ¼ cup orzo or more if preferred
  • 5.2 ounces Boursin cheese the star ingredient
  • ½ cup heavy cream or half-and-half optional for extra richness

Method
 

Directions
  1. Season the Chicken: Sprinkle salt and black pepper over the chicken pieces. Sear in olive oil in a large pot for 5-6 minutes until cooked through. Remove and set aside.
  2. Cook the Mushrooms: In the same pot, melt butter and add sliced mushrooms. Cook for 3-4 minutes until golden brown, then add onion and cook 5 minutes. Stir in garlic and thyme for another minute.
  3. Deglaze with Wine: Pour in wine and scrape up brown bits. Simmer for 2-3 minutes until it reduces.
  4. Add Chicken Broth and Orzo: Add chicken broth and bring to boil. Stir in orzo and simmer for 8-10 minutes or until tender.
  5. Incorporate the Cheese: Add Boursin cheese until melted. Return chicken and stir in cream if using. Simmer for 2-3 minutes.
  6. Season and Garnish: Adjust seasoning with salt and pepper. Serve warm with optional garnishes like parsley or lemon zest.
