How to Make Creamy Cajun Chicken & Rice
  1. Marinate Chicken: Coat chicken breasts in olive oil and Cajun seasoning. Marinate overnight or at least 30 minutes.
  2. Cook Chicken: Heat a cast iron skillet over medium-high heat, add butter, and sear chicken for 6-7 minutes on each side until golden brown.
  3. Make Cajun Rice: Sauté diced red onion and minced garlic in the same skillet. Stir in Cajun seasoning and day-old rice.
  4. Prepare Creamy Sauce: Whisk melted butter, Cajun seasoning, milk, cream cheese, and Parmesan over low heat until smooth.
