  • 1 large Egg Essential for binding.
  • 1 tsp Vanilla Extract Use pure vanilla for best results.
For the Lemon Layer
  • 0.5 cup Lemon Juice Fresh lemon juice is preferred.
  • 1 tbsp Lemon Zest Use a microplane for the finest zest.
Optional Topping
  • 1 tbsp Powdered Sugar For dusting just before serving.

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, powdered sugar, and softened butter until crumbly. Press into a lined baking pan. Bake for 15 minutes until golden brown.
  3. In another bowl, beat cream cheese and granulated sugar until smooth. Add the egg and vanilla, mixing until well incorporated. Spread over cooled crust.
  4. In a separate bowl, whisk together eggs, sugar, flour, lemon juice, and lemon zest until smooth. Pour over the cheesecake layer.
  5. Bake for 25 minutes until slightly jiggly in the center.
  6. Allow to cool completely in the pan and refrigerate for at least 2 hours before serving. Dust with powdered sugar if desired.
