- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, powdered sugar, and softened butter until crumbly. Press into a lined baking pan. Bake for 15 minutes until golden brown.
- In another bowl, beat cream cheese and granulated sugar until smooth. Add the egg and vanilla, mixing until well incorporated. Spread over cooled crust.
- In a separate bowl, whisk together eggs, sugar, flour, lemon juice, and lemon zest until smooth. Pour over the cheesecake layer.
- Bake for 25 minutes until slightly jiggly in the center.
- Allow to cool completely in the pan and refrigerate for at least 2 hours before serving. Dust with powdered sugar if desired.
