Preparation Steps
  1. Preheat the oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil.
  2. Slice chicken breasts horizontally to create thin cutlets and pound them gently to ensure even thickness.
  3. Whisk together olive oil, minced garlic, Italian seasoning, salt, and pepper, then add the chicken, cover, and marinate for 15-30 minutes.
  4. Sauté fresh spinach in a skillet over medium heat until wilted, about 2-3 minutes, then set aside.
  5. Beat cream cheese in a bowl until smooth, then add sautéed spinach and half of the shredded mozzarella cheese, mixing until well combined.
  6. Optional: Sear the marinated chicken in a hot skillet for 1-2 minutes per side for extra flavor.
  7. Layer the chicken in the greased baking dish and spread the cream cheese mixture evenly over the top.
  8. Top with remaining mozzarella cheese and bake for 20-30 minutes, until the chicken's internal temperature reaches 165°F (75°C).
  9. Rest the casserole for 5 minutes before serving.
