Ingredients
  

For the Dressing
  • 1 cup Plain Greek Yogurt Swap for non-dairy yogurt if vegan.
  • 1/2 cup Mayonnaise Can be omitted or replaced with more yogurt.
  • 2 tablespoons Fresh Lemon Juice Lime juice works as an alternative.
  • 1 tablespoon Dijon Mustard Yellow mustard can substitute.
  • 1 teaspoon Kosher Salt Table salt can be used sparingly.
  • 1 teaspoon Black Pepper Freshly ground gives the best taste.
For the Salad Base
  • 2 cups Chickpeas Packed with protein and fiber; dried can be used if soaked.
  • 1 cup Diced English Cucumbers Regular can be used but peel if waxy.
  • 1/2 cup Red Onion Substitute with yellow onion if preferred.
  • 2 tablespoons Fresh Dill Fresh parsley or oregano can substitute.
  • 1/4 cup Fresh Parsley Feel free to omit if out.
  • 1/2 cup Feta Cheese Skip for a vegan version or opt for vegan feta.

Method
 

Preparation
  1. Prepare the Yogurt Dressing: In a small bowl, mix together the plain Greek yogurt, mayonnaise, fresh lemon juice, Dijon mustard, kosher salt, and black pepper until smooth and creamy. Set aside to let the flavors meld.
  2. Combine Salad Base: In a large bowl, toss together the chickpeas, diced English cucumbers, red onion, fresh dill, and parsley until all ingredients are evenly mixed.
  3. Mix Salad and Dressing: Pour the yogurt dressing over the salad mixture and gently toss to ensure all the ingredients are well-coated.
  4. Add Feta (optional): If using feta cheese, fold it gently into the salad at this stage.
  5. Chill and Serve: Cover the salad with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld beautifully. Serve it chilled.
