For the Salmon
  • 4 fillets Salmon Fresh or thawed frozen
  • 2 tablespoons Olive Oil Can be substituted with avocado oil
  • to taste Salt
  • to taste Pepper
For the Creamy Sauce
  • 4 tablespoons Butter Unsalted preferred
  • 4 cloves Garlic Minced
  • 1/2 cup Sun-Dried Tomatoes Oil-packed for extra moisture
  • 1 cup Chicken Broth Vegetable broth can be used
  • 1 cup Heavy Cream Half-and-half is a lighter option
  • 1/2 cup Parmesan Cheese Can substitute with Pecorino Romano
  • 1 teaspoon Italian Herbs Dried or fresh
  • 2 cups Spinach Fresh

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season salmon fillets with salt and pepper and cook in the skillet for about 5 minutes on each side.
  3. Remove the salmon and set aside.
  4. In the same skillet, melt the butter and sauté the minced garlic until fragrant.
  5. Stir in sun-dried tomatoes and cook for an additional 2 minutes.
  6. Pour in chicken broth and let it reduce slightly, then add heavy cream and stir in Parmesan and herbs.
  7. Allow it to simmer for 3 minutes until sauce thickens.
  8. Add spinach and let it wilt before placing salmon back in the skillet and spooning the sauce over it.
  9. Simmer for an additional 3 minutes and serve hot.
