For the Orzo Base
  • 1 cup Orzo Pasta Do not rinse
  • 2 tbsp Butter Use unsalted if preferred
  • 1 tbsp Olive Oil Add for flavor
For the Aromatics
  • 4 cloves Garlic Minced
  • 1 medium Shallot Finely diced
For the Sauce
  • 1/2 cup Dry White Wine Can substitute with broth and lemon juice
  • 3 cups Chicken or Vegetable Broth Warm
  • 1 cup Heavy Cream Can substitute with half-and-half
  • 1/2 cup Parmesan Cheese Freshly grated
For the Garnish
  • 2 cups Fresh Spinach Optional
  • 1 medium Lemon Juice and zest

Method
 

Cooking Directions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the seasoned shrimp in a single layer and cook for 1-2 minutes on each side until they turn pink. Remove to a plate.
  3. Lower the heat, add butter to the skillet, then toss in shallots and cook until soft.
  4. Stir in minced garlic followed by dry orzo. Toast for 1-2 minutes.
  5. Pour in dry white wine, scraping up any bits from the pan. Let it reduce by half.
  6. Add warm broth and bring to a boil. Then reduce heat to a gentle simmer.
  7. Allow orzo to cook for about 8-10 minutes, stirring occasionally.
  8. Stir in heavy cream, Parmesan, and spinach. Cook until spinach wilts.
  9. Squeeze in fresh lemon juice and zest, adjusting seasoning.
  10. Return cooked shrimp to the skillet and toss gently to warm through.
