Steps
  1. In a medium bowl, combine chicken pieces with olive oil and sprinkle with chili powder, cumin, garlic powder, salt, and pepper. Mix well.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and sauté until browned, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, melt the butter. Add chopped onion and cook until softened, about 3-5 minutes.
  4. Add minced garlic and sauté for an additional minute.
  5. Stir in the diced green chilies and chicken broth, bringing to a gentle simmer.
  6. Lower the heat and stir in softened cream cheese until smooth. Gradually mix in heavy cream, followed by cilantro and Monterey Jack cheese.
  7. Return the seared chicken to the skillet, ensuring it's coated in the sauce. Simmer for 5-10 minutes.
  8. Drizzle lime juice over the dish before serving.
  9. Top with extra cilantro if desired and serve over cauliflower rice or zoodles.
