- In a medium bowl, combine chicken pieces with olive oil and sprinkle with chili powder, cumin, garlic powder, salt, and pepper. Mix well.
- Heat a large skillet over medium-high heat. Add the seasoned chicken and sauté until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, melt the butter. Add chopped onion and cook until softened, about 3-5 minutes.
- Add minced garlic and sauté for an additional minute.
- Stir in the diced green chilies and chicken broth, bringing to a gentle simmer.
- Lower the heat and stir in softened cream cheese until smooth. Gradually mix in heavy cream, followed by cilantro and Monterey Jack cheese.
- Return the seared chicken to the skillet, ensuring it's coated in the sauce. Simmer for 5-10 minutes.
- Drizzle lime juice over the dish before serving.
- Top with extra cilantro if desired and serve over cauliflower rice or zoodles.
