For the Mushroom Mixture
  • 1 cup Portobello Mushroom Can swap with shiitake or cremini.
  • 1 cup Swiss Brown Mushrooms Feel free to use any type of mushrooms you enjoy.
  • 1 small Onion Yellow or shallots are good substitutes.
  • 2 cloves Garlic Reduce quantity if you prefer a milder taste.
  • 2 teaspoons Extra Virgin Olive Oil Avocado oil is an excellent alternative.
For Assembly
  • 1/2 cup Ricotta Cheese Use vegan ricotta or hummus for a plant-based version.
  • 1 tablespoon Balsamic Vinegar Apple cider vinegar can be used as a substitute.
  • 2 cups Arugula (Rocket) Leaves Can swap with spinach.
  • to taste Salt and Black Pepper Adjust to your dietary needs and preferences.
  • 2 tablespoons Chopped Parsley Other herbs like chives or basil also work well.
  • to taste Chili Flakes (Optional) Adjust according to spice preference.

Preparation Steps
  1. In a large skillet, heat 2 teaspoons of olive oil over medium heat. Add the sliced onion with a sprinkle of salt and sauté until translucent, about 3-4 minutes.
  2. Toss in the diced garlic and sauté for an additional 1-2 minutes until fragrant.
  3. Stir in the sliced portobello and Swiss brown mushrooms, adding more olive oil. Cook on high heat, stirring frequently, until browned, about 5-7 minutes. Season with salt, pepper, and chopped parsley.
  4. In a bowl, combine arugula with balsamic vinegar and a drizzle of olive oil. Season lightly with salt and toss gently.
  5. Spread a layer of ricotta cheese on the toasted sourdough. Top with arugula salad and sautéed mushroom mixture, finishing with chili flakes if desired.
