  • 2 tablespoons Butter or use olive oil for dairy-free
  • 1 cup Heavy Cream or coconut cream for dairy-free
  • 1 cup Parmesan Cheese or pecorino for a different taste
  • 1 cup Chicken Stock or vegetable broth for vegetarian
  • 2 teaspoons Italian Seasoning or a custom dried herb mix
For the Chicken
  • 1 pound Chicken thighs cut into thin strips
  • 1 teaspoon Sea Salt adjust to taste
  • 1/2 teaspoon Ground Pepper can use black or white pepper
For the Vegetables
  • 1 medium White Onion can substitute with yellow onion
  • 3 cloves Garlic fresh is preferred
  • 1 cup Pepperoncini Peppers increase for more heat
  • 1 cup Roasted Red Peppers can use fresh bell peppers

Method
 

How to Make Creamy Pepperoncini Chicken Skillet
  1. Cut the chicken into thin strips and season them generously with sea salt and ground pepper.
  2. Melt the butter in a large skillet over medium-high heat. Add the seasoned chicken strips, cooking until golden brown on all sides (about 8 minutes). Remove the chicken and set aside.
  3. In the same skillet, add the diced white onion and garlic. Sauté until the onion is translucent and fragrant, approximately 5 minutes.
  4. Pour in the chicken stock and add the roasted red peppers. Let this simmer for around 5 minutes, reducing by half.
  5. Turn off the heat and whisk in the heavy cream and Parmesan cheese until smooth.
  6. Return the skillet to medium heat, adding the Italian seasoning and pepperoncini. Stir well.
  7. Add the browned chicken back into the skillet and let it simmer until cooked through and the sauce thickens.
  8. Serve hot over rice, veggies, or pasta.
