For Seasoning
  • 1 teaspoon Spices (nutmeg, cinnamon, salt, pepper) Adjust according to personal taste.
  • 1/2 cup Parmesan Cheese Grana Padano is a fine alternative.

Cooking Steps
  1. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente, about 8-10 minutes. Reserve a cup of pasta water before draining.
  2. In a large skillet over medium heat, sauté chopped onion and minced garlic until translucent and fragrant, about 3-4 minutes.
  3. Add the pumpkin puree, cream, and broth to the skillet; stir until everything is well combined and heated through, about 5-7 minutes.
  4. Season the sauce with nutmeg, cinnamon, salt, and pepper, simmering for about 5 minutes to enhance the flavors.
  5. Toss the drained pasta into the sauce, mixing gently and adding reserved pasta water until the desired sauce consistency is reached.
  6. Serve warm, topped with grated Parmesan cheese if desired.
