  • 1 cup Raw Cashews Soaked in water for 6-8 hours.
  • 1 medium Red Bell Pepper Roasted for extra flavor.
  • 1 cup Water Adjust for consistency.
  • 1/4 cup Nutritional Yeast Keep it vegan.
  • 1/2 teaspoon Salt Adjust to taste.
  • 1 teaspoon Onion Powder Or sautéed shallots for gentler flavor.
  • 1/2 teaspoon Ground Turmeric For color and flavor.
  • 1/4 teaspoon Ground Nutmeg Optional.
For Serving
  • 8 ounces Pasta Your choice, spaghetti squash or vegetables also work.
  • Optional Add-ins Grilled vegetables, beans, chickpeas, or tofu.

Method
 

Preparation
  1. Soak the raw cashews in water for 6-8 hours, then drain and pat dry.
  2. In a high-speed blender, combine the soaked cashews, roasted red bell pepper, water, nutritional yeast, salt, onion powder, turmeric, and optional nutmeg until smooth and creamy.
  3. Transfer the mixture to a pot over medium heat, stirring occasionally until warmed through without boiling.
  4. Cook your choice of pasta according to package directions, then drain.
  5. Pour the creamy sauce over the drained pasta, mixing well to coat. Optionally, fold in any add-ins.
