  • 1 cup heavy cream or coconut milk for a dairy-free option
  • 1 tablespoon Cajun seasoning ensure it's gluten-free if needed

  • 2 cups cauliflower rice low-carb pairing

Instructions
  1. In a large skillet over medium heat, add a bit of oil and sauté the minced garlic until fragrant, about 1 minute.

  3. Stir in the zucchini and roasted peppers, cooking for another 3-4 minutes until the veggies are tender yet still crisp.
  4. Pour in the heavy cream, then sprinkle with Cajun seasoning, salt, and pepper. Let the mixture simmer for about 3-5 minutes, stirring occasionally until the sauce thickens slightly.
  5. Remove from heat and serve immediately, garnished with fresh herbs or a sprinkle of extra Cajun seasoning as desired.
