  • 1/2 cup Sun-Dried Tomatoes Chopped; use fresh tomatoes for a lighter flavor.
For Cooking

Method
 

Cooking Instructions
  1. Fill a large pot with water, add a pinch of salt, and bring to a rolling boil. Cook the spaghetti until al dente, about 8-10 minutes, then drain, reserving a cup of pasta water.
  2. In a large skillet, pour in olive oil and heat over medium. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add fresh spinach and stir until it wilts down, about 2-3 minutes.
  4. Stir in sun-dried tomatoes and heavy cream. Simmer gently for 3-5 minutes.
  5. Add Parmesan cheese and stir until it melts. If too thick, mix in reserved pasta water.
  6. Add the cooked spaghetti to the skillet, tossing everything together.
  7. Serve warm, optionally sprinkle with extra Parmesan.
