Method
 

Preparation
  1. Dry the Wings: Place the wings on a rack in the fridge overnight or pat them dry with paper towels.
  2. Preheat Oven: Set your oven to 250°F (120°C) and position racks accordingly.
  3. Prepare Baking Tray: Line with foil and place a rack on top, spraying lightly with oil.
  4. Toss Wings: Combine wings with baking powder and kosher salt in a large bowl.
  5. Bake Low Temperature: Arrange wings skin-side up and bake for 30 minutes.
  6. Bake High Temperature: Increase temperature to 425°F (220°C) and bake for 40-50 minutes until golden and crispy.
  7. Sauce the Wings: Toss cooked wings in Buffalo sauce immediately after baking.
  8. Prepare Blue Cheese Dip: Mix blue cheese, sour cream, mayonnaise, minced garlic, lemon juice, and milk until smooth.
