Preparation
  1. Begin by pounding the beef slices to about ¼-inch thickness. Season both sides generously with salt and freshly ground black pepper.
  2. Lightly coat the seasoned beef slices with all-purpose flour, shaking off the excess.
  3. Dip each floured slice into the whisked eggs, then press into fine breadcrumbs until fully covered.
  4. In a skillet, pour enough vegetable oil to cover about ½ inch deep and heat until shimmering at approximately 350°F.
  5. Carefully place the breaded beef slices into the hot oil, cooking for 2-3 minutes on each side until golden brown.
  6. Once cooked, transfer the fried slices to a paper towel-lined rack and let rest for about 2 minutes.
