Ingredients
  

For the Cucumber Base
  • 2 cups Cucumbers choose firm cucumbers for crisp bites
For the Creamy Filling
  • 8 oz Cream Cheese softened for easy mixing
  • 2 tbsp Mayonnaise or Greek yogurt for a healthier substitute
  • 1/2 cup Sour Cream or more cream cheese if desired
  • 1 tbsp Powdered Ranch Seasoning try homemade ranch for a personal touch
  • 1 tbsp Fresh Lemon Juice lime juice can be a substitute
  • 1 tsp Garlic Powder fresh minced garlic can also be used
  • 2 tbsp Fresh Dill minced; use dried dill sparingly if no fresh
For the Toppings
  • 1 cup Cherry Tomatoes sliced in half
  • 1/2 cup Bacon Crumbles or crispy tofu as a vegetarian option
  • 4 oz Smoked Salmon or canned salmon if in a pinch

Method
 

How to Make Cucumber Bites with Cream Cheese
  1. Wash the cucumbers thoroughly and slice them into 1/2" thick rounds.
  2. Pat dry each cucumber slice gently with a paper towel.
  3. Hollow out the center of each cucumber round using a melon scooper.
  4. Mix together softened cream cheese, mayonnaise, sour cream, ranch seasoning, lemon juice, garlic powder, and minced dill in a bowl.
  5. Fill a plastic piping bag with the creamy mixture.
  6. Pipe the herbed cream cheese mixture into each hollowed cucumber round.
  7. Top each cucumber bite with cherry tomatoes, dill, bacon crumbles, or smoked salmon.
  8. Refrigerate until ready to serve.
