  • 1 pound Large Shrimp fresh or frozen
  • 1 teaspoon Salt sea salt recommended
For the Coating
  • 1 cup Flour or cornstarch for gluten-free
  • 1 cup Panko Bread Crumbs or regular breadcrumbs
  • 1 cup Unsweetened Coconut try toasted for deeper flavor
For the Seasoning
  • 1 teaspoon Paprika
  • 1/2 teaspoon Black Pepper
For the Binding
  • 1 large Egg or flax egg for vegan option
  • 1/4 cup Milk any milk alternative works
For Frying
  • 2 cups Coconut Oil or vegetable/canola oil

Method
 

Instructions
  1. In a large bowl, mix shrimp with flour, paprika, salt, and black pepper until evenly coated.
  2. In a medium shallow bowl, whisk together the egg and milk.
  3. In a second shallow bowl, mix shredded coconut and Panko breadcrumbs together.
  4. Dip each shrimp into the egg mixture, then coat thoroughly with the coconut and breadcrumb mixture.
  5. Place the coated shrimp on a baking sheet with space between each piece.
  6. In a large skillet, heat coconut oil over medium heat until shimmering.
  7. Carefully fry the shrimp for about 2 minutes on each side until golden brown.
  8. Drain the cooked shrimp on paper towels to absorb excess oil.
  9. Serve immediately with a dipping sauce of your choice.
