Ingredients
  

Cod Bites
  • 1 pound Cod fillets cut into bite-sized pieces
  • 1 cup All-purpose flour or gluten-free flour
  • 1 teaspoon Garlic powder or fresh garlic
  • 1 teaspoon Paprika or smoked paprika
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black pepper freshly ground is best
  • 2 large Eggs beaten
  • 1 cup Panko breadcrumbs or regular breadcrumbs
  • 1 cup Vegetable oil for frying
Creamy Lemon Herb Dip
  • 1/2 cup Mayonnaise or vegan mayo
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons Lemon juice fresh is ideal
  • 1 teaspoon Lemon zest optional
  • 1 tablespoon Fresh dill or adjust with dried herbs
  • 1 tablespoon Fresh parsley or adjust with dried herbs
  • 1 clove Garlic minced
  • to taste Salt for seasoning
  • to taste Black pepper for seasoning

Method
 

Coating and Frying
  1. In a shallow bowl, whisk together flour, garlic powder, paprika, salt, and black pepper until well combined.
  2. In a second bowl, beat the eggs until frothy.
  3. Pour panko breadcrumbs into a third bowl to create your assembly line.
  4. Take each piece of cod, dip it into the flour mixture, ensuring it’s lightly coated.
  5. Shake off any excess, then dip into the beaten eggs, and roll it in the panko breadcrumbs.
  6. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  7. Carefully add the coated cod bites in batches, frying for 3-4 minutes on each side until golden brown and crispy.
  8. Remove them and place on paper towels to drain the excess oil.
Making the Dip
  1. In a mixing bowl, combine mayonnaise, Greek yogurt, lemon juice, lemon zest, dill, parsley, and minced garlic.
  2. Stir until everything is perfectly blended and smooth; season with a touch of salt and pepper to taste.
Serving
  1. Arrange the golden crispy cod bites attractively on a platter and serve alongside your Creamy Lemon Herb Dip.
