Coating and Frying
- In a shallow bowl, whisk together flour, garlic powder, paprika, salt, and black pepper until well combined.
- In a second bowl, beat the eggs until frothy.
- Pour panko breadcrumbs into a third bowl to create your assembly line.
- Take each piece of cod, dip it into the flour mixture, ensuring it’s lightly coated.
- Shake off any excess, then dip into the beaten eggs, and roll it in the panko breadcrumbs.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering.
- Carefully add the coated cod bites in batches, frying for 3-4 minutes on each side until golden brown and crispy.
- Remove them and place on paper towels to drain the excess oil.
Making the Dip
- In a mixing bowl, combine mayonnaise, Greek yogurt, lemon juice, lemon zest, dill, parsley, and minced garlic.
- Stir until everything is perfectly blended and smooth; season with a touch of salt and pepper to taste.
Serving
- Arrange the golden crispy cod bites attractively on a platter and serve alongside your Creamy Lemon Herb Dip.
