- Prepare the Brussels sprouts by trimming the stems and discarding any discolored or damaged leaves. Keep the smaller sprouts whole and halve the larger ones.
- Toss the Brussels sprouts in a mixing bowl with olive oil, salt, red pepper flakes, and black pepper until evenly coated.
- Arrange the sprouts on a baking sheet in a single layer, cut side down, and roast for about 15-20 minutes.
- Flip the Brussels sprouts carefully with a spatula and continue roasting for another 10-15 minutes, until crispy.
- Cook the bacon in a skillet over medium-high heat until crispy, about 6-8 minutes, then transfer to paper towels to drain.
- Combine the roasted Brussels sprouts with the crispy bacon and a squeeze of lemon juice in a serving bowl. Toss and add Parmesan cheese if desired.
