  • 1 cup Shredded Cheddar Cheese Use Monterey Jack or Pepper Jack for an extra kick of flavor.
  • 4 scallions Green Onions Substitute with chives if you don’t have green onions.
  • 1 cup Shredded Carrots Can be replaced with diced bell peppers.
  • 2 tbsp Cajun Seasoning Adjust according to your heat preference.
  • 1 tsp Garlic Powder Fresh garlic can be used for a more pronounced taste.
For Assembly
  • 1 pkg Egg Roll Wrappers Check for gluten-free options if preferred.
  • 2 cups Vegetable Oil Can substitute with canola oil or peanut oil.

Method
 

Preparation
  1. Heat a medium skillet over medium heat and add the ground beef. Cook until browned, stirring occasionally to break it up. Drain any excess grease.
  2. Sprinkle in the Cajun seasoning and garlic powder, mixing well. Let cool slightly.
  3. In a large bowl, combine the cooked beef with shredded cheddar cheese, chopped green onions, and shredded carrots. Mix until combined.
  4. Place an egg roll wrapper in a diamond shape, spoon 2-3 tablespoons of the filling into the center, fold, tuck in sides, and roll it tightly.
  5. In a deep skillet, heat vegetable oil to 350°F (175°C).
  6. Carefully place filled egg rolls into the hot oil in batches. Fry for about 3-4 minutes until golden brown.
  7. Plate the hot Voodoo Egg Rolls and serve with your favorite dipping sauce.
