How to Make Zesty Baked Zucchini Sticks
  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the zucchini into uniform sticks, approximately ½ inch thick.
  3. In a large bowl, mix breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. In a separate bowl, beat the eggs until well combined.
  5. Dip each zucchini stick into the egg mixture, letting the excess drip off, then roll it in the breadcrumb mixture.
  6. Place coated sticks on the baking sheet, leaving space in between. Drizzle lightly with olive oil or use cooking spray.
