Preparation and Cooking
  1. In your slow cooker, toss together the frozen diced potatoes, finely diced onion, sour cream, cream of chicken soup, garlic powder, onion powder, salt, pepper, and melted butter. Stir in 1.5 cups of shredded cheddar cheese until everything is evenly coated.
  2. Secure the lid on your slow cooker and set it to LOW. Let it cook for about 4 hours, or until the potatoes are fork-tender and the mixture appears creamy.
  3. After cooking, remove the lid and sprinkle the remaining 1 cup of cheddar cheese on top. Cover again and cook for an additional 15 minutes, allowing the cheese to melt and become bubbly.
  4. Once the cheese is melted, serve the Crockpot Cheesy Potatoes warm, enjoying it as either a main dish or a hearty side.
