  • 2 cups Red Cabbage shredded
  • 1 cup Dried Fruit e.g., raisins or cranberries
  • 1/2 cup Nuts e.g., walnuts or pecans, chopped
  • 1/4 cup Fresh Parsley chopped
For the Dressing
  • 1 cup Plain Greek Yogurt substitute with dairy-free yogurt for vegan option
  • 1/2 cup Mayonnaise or more yogurt for a lighter version
  • 1/4 cup Fresh Orange Juice or other citrus juices
  • 1 tablespoon Lemon Juice optional
  • 2 tablespoons Honey or maple syrup for vegan option

  • to taste Pepper

Method
 

Preparation
  1. Peel and grate the carrots into a large mixing bowl.
  2. Core and dice the apples, adding them to the bowl.
  3. Finely shred the red cabbage and add it to the bowl along with the dried fruit, nuts, and parsley.
  4. In a separate bowl, whisk together the yogurt, mayonnaise, orange juice, lemon juice, honey, salt, and pepper until smooth.
  5. Pour the dressing over the salad mixture and toss gently to combine thoroughly.
  6. Adjust seasoning if necessary and refrigerate for about 15 minutes before serving.
  7. Garnish with additional nuts or parsley and serve chilled or at room temperature.
