- In a large bowl, combine the coleslaw mix, black beans, canned corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and ground cumin. Mix everything thoroughly until well-combined.
- In a medium bowl, whisk together the sour cream, mayonnaise, fresh lime juice, and chipotle sauce until smooth and creamy.
- Pour the creamy dressing over the salad base and gently toss to ensure everything is coated nicely. Fold in most of the Fritos but save some for garnish.
- Just before serving, sprinkle the reserved Fritos on top for added crunch.
