Ingredients
  

For the Salad Base
  • 1 pkg Coleslaw Mix Choose a mix with green and purple cabbage for more color.
  • 1 cup Black Beans Feel free to swap with pinto or kidney beans.
  • 1 can Canned Corn Make sure to drain and pat dry.
  • 1 medium Jalapeño Leave out for a milder flavor or substitute with a sweet bell pepper.
  • 1 medium Red Bell Pepper Any variety of bell pepper can be used.
  • 2 stalks Green Onions Chives can easily replace them.
  • 1/4 cup Cilantro Omit if not preferred.
For the Dressing
  • 1/2 cup Sour Cream Greek yogurt can be used as a lighter substitute.
  • 1/2 cup Mayonnaise Use vegan mayo for a plant-based option.
  • 2 tbsp Fresh Lime Juice Bottled lime juice can also work in a pinch.
  • 1 tbsp Chipotle Sauce Adjust according to heat tolerance.
For the Crunch
  • 2 cups Fritos Corn Chips Tortilla chips can substitute.
Spices & Seasonings
  • 1 tbsp Taco Seasoning Use store-bought or homemade.
  • 1 tsp Ground Cumin Use in moderation.

Method
 

Instructions
  1. In a large bowl, combine the coleslaw mix, black beans, canned corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and ground cumin. Mix everything thoroughly until well-combined.
  2. In a medium bowl, whisk together the sour cream, mayonnaise, fresh lime juice, and chipotle sauce until smooth and creamy.
  3. Pour the creamy dressing over the salad base and gently toss to ensure everything is coated nicely. Fold in most of the Fritos but save some for garnish.
  4. Just before serving, sprinkle the reserved Fritos on top for added crunch.
