- Preheat the oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas until smooth. Mix in almond milk, honey or maple syrup, and vanilla extract until creamy.
- In a separate bowl, whisk together rolled oats, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to the wet mixture and stir gently until just combined. Fold in chocolate chips or nuts if desired.
- Pour the mixture into a prepared 8x8 inch pan and smooth the top. Bake for 20-25 minutes until set.
- Allow bars to cool in the pan for about 10 minutes, then lift out and cut into squares.
