How to Make Baked Yogurt
- Preheat your oven to 350°F (175°C) and line an 8x8 square baking dish with parchment paper.
- In a large mixing bowl, combine the Greek yogurt, eggs, maple syrup, and vanilla extract. Whisk until smooth.
- Add the cornstarch and whisk again until fully integrated.
- Gently fold in 1 cup of berries into the yogurt mixture, ensuring to keep the berries intact.
- Pour the mixture into the lined baking dish and spread evenly. Sprinkle the remaining 1/2 cup of berries on top.
- Bake for 45 minutes or until the center is set and no longer jiggles. Let cool before slicing into 9 portions.
- Enjoy the slices as is or drizzle with more maple syrup for added sweetness.
