Preparation Steps
  1. Prepare the Nut Mixture: Chop the raw pistachios, walnuts, or pecans, and mix them with almond flour, salt, lime zest, cinnamon (if using), and maple syrup in a bowl. Continue mixing until slightly sticky, about 2-3 minutes.
  2. Make the Oat Mixture: Gently heat the non-dairy milk until warm but not boiling. In a separate bowl, combine old-fashioned oats, chia seeds, maple syrup, vanilla extract, yogurt, lime zest, and 3/4 cup of hot non-dairy milk. Stir well until combined, which should take about 1-2 minutes.
  3. Combine Mixtures: Fold 1/4 to 1/3 of the prepared nut mixture into the oat mixture. Let your combined creation sit for 5-10 minutes, allowing the oats to absorb the liquid and create that creamy texture.
  4. Assemble: Scoop the oat mixture into serving jars or bowls. Top generously with the remaining nut mixture and your choice of fresh fruits for a splash of color and flavor.
  5. Chill: Place your assembled jars in the refrigerator. Allow them to chill for at least 2 hours or overnight, but they can be stored for up to four days!
