Ingredients
  

For the Cake
  • 2 cups Glutinous Rice Essential for the sticky texture
  • 1 can Coconut Milk Full-fat for richer flavor
  • 1 cup Brown Sugar Adds sweetness and depth
  • 1 pinch Salt Balances sweetness
For the Topping
  • 1 can Coconut Milk Remaining milk for topping
  • 1/2 cup Brown Sugar For caramelized sweetness

Method
 

Preparation
  1. Rinse the Rice: Thoroughly rinse glutinous rice until water runs clear; soak for at least 4 hours or overnight.
  2. Cook the Rice: Drain soaked rice and steam it for about 30-35 minutes until tender.
  3. Prepare Coconut Mixture: In a saucepan, combine coconut milk, brown sugar, and a pinch of salt; heat until dissolved.
  4. Mix: Combine the cooked rice with the coconut mixture until well-coated.
  5. Transfer & Shape: Pour the mixture into a greased pan and press down firmly.
  6. Prepare Topping: Mix remaining coconut milk with brown sugar; heat until boiling and pour over rice mixture.
  7. Bake/Steam: Cook in a preheated oven at 350°F for 20-30 minutes until topping is set and glossy.
  8. Cool & Serve: Allow to cool completely before cutting into squares; can be served warm or at room temperature.
