How to Make Blueberry Lemon Pancake Bites
- Preheat the oven to 400°F (200°C) and grease a 24-cup mini muffin tin.
- Whisk together the dry ingredients in a large bowl: all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined and fluffy.
- Combine the wet ingredients in a separate bowl: mix buttermilk, large eggs, melted butter, fresh lemon juice until smooth.
