How to Make Blueberry Lemon Pancake Bites
  1. Preheat the oven to 400°F (200°C) and grease a 24-cup mini muffin tin.
  2. Whisk together the dry ingredients in a large bowl: all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined and fluffy.
  3. Combine the wet ingredients in a separate bowl: mix buttermilk, large eggs, melted butter, fresh lemon juice until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined, being careful not to overmix.
  5. Fold in the flour-coated blueberries and lemon zest until evenly distributed throughout the batter.
  6. Fill each muffin cup about three-quarters full with batter.
  7. Bake for 10-14 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Cool the bites in the tin for 5 minutes, then transfer to a wire rack to cool completely.
