Method
 

Preparation
  1. In a bowl, combine fish sauce, dark soy sauce, sweet soy sauce, and oyster sauce; mix well and set aside.
  2. Rinse your cockles or shrimp under cold water. Trim the garlic chives and soak both chives and bean sprouts in water.
  3. If your flat rice noodles are sticky, microwave them for 30 seconds intervals until they soften.
  4. Heat your wok on high, adding oil to coat the bottom. Sauté minced garlic for about 10-15 seconds.
  5. Add your prepared cockles or shrimp to the hot wok and sauté for about 15-20 seconds.
  6. Toss in the soaked bean sprouts and garlic chives; sauté for another 15-20 seconds.
  7. Introduce your warmed noodles and sauce to the wok and stir to combine.
  8. Push the noodles to one side of the wok, crack in your eggs, and scramble them before mixing.
  9. Turn off the heat and serve your fragrant Char Kuey Teow immediately.
