Preparation
- In a bowl, combine fish sauce, dark soy sauce, sweet soy sauce, and oyster sauce; mix well and set aside.
- Rinse your cockles or shrimp under cold water. Trim the garlic chives and soak both chives and bean sprouts in water.
- If your flat rice noodles are sticky, microwave them for 30 seconds intervals until they soften.
- Heat your wok on high, adding oil to coat the bottom. Sauté minced garlic for about 10-15 seconds.
- Add your prepared cockles or shrimp to the hot wok and sauté for about 15-20 seconds.
- Toss in the soaked bean sprouts and garlic chives; sauté for another 15-20 seconds.
- Introduce your warmed noodles and sauce to the wok and stir to combine.
- Push the noodles to one side of the wok, crack in your eggs, and scramble them before mixing.
- Turn off the heat and serve your fragrant Char Kuey Teow immediately.
