  • 8 oz Cream Cheese softened
  • 1 cup Shredded Cheddar can substitute with pepper jack
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tsp Kosher Salt adjust to taste
  • 1/2 tsp Black Pepper adjust to taste
For the Coating
  • 4 slices Bacon cooked and chopped
  • 1/2 cup Roasted Pecans can swap with walnuts
  • 1/4 cup Chives finely chopped
For Serving
  • 18 sticks Pretzel Sticks for dipping

Method
 

Preparation
  1. In a large bowl, blend softened cream cheese, shredded cheddar, garlic powder, and paprika until smooth and combined. Season with kosher salt and black pepper.
  2. Using a cookie scoop, create 18 small balls (about 1 inch in size). Place them on a parchment-lined baking sheet and chill in the refrigerator for 1 hour.
  3. In a nonstick skillet, cook bacon over medium heat until crisp, about 8 minutes. Drain on paper towels and chop finely.
  4. In a shallow dish, mix the chopped bacon, roasted pecans, and chives to create a coating.
  5. Roll each chilled cheese ball in the bacon-pecan mixture to coat fully. Insert a pretzel stick into each for easy dipping.
  6. Let the Cheese Ball Bites sit at room temperature for about 15 minutes before serving, optionally garnishing with extra chives or paprika.
