  • 400 g broccoli, cut into bite-sized florets Steam or boil until tender; it won’t cook further in the stir fry.
  • 0.5 onion sliced Adds flavor and sweetness.
  • 2 cloves garlic, finely minced Chop rather than crush for even sautéing.
For the Sauce
  • 3 tbsp oyster sauce Provides depth and sweetness to the flavor profile.
  • 3 tbsp light soy sauce Gives a rich umami flavor.
  • 1.5 tbsp Chinese cooking wine (Shaoxing wine or Mirin) Opt for dry sherry if you don't have cooking wine.
  • 2 tbsp cornstarch Thickens the sauce for that glossy finish.
  • 2 tsp toasted sesame oil Adds a fragrant hint of sesame.
For Cooking
  • 2 tbsp oil (peanut, vegetable, or canola) Necessary for frying ingredients.
  • 1.25 cups water Keeps the sauce plentiful.

Cooking Steps
  1. If using chicken breast, tenderize it with baking soda for about 20 minutes, rinse under cold water, and slice thinly for even cooking.
  2. Steam or boil your broccoli florets until they are bright green and tender, then drain well to ensure the sauce doesn't become watered down.
  3. In a bowl, mix cornstarch with light soy sauce until completely smooth, then add oyster sauce, Chinese cooking wine, sesame oil, and a pinch of white pepper.
  4. Heat oil in a large skillet over high heat. Toss in minced garlic and sliced onion, sautéing briefly until golden and fragrant, around 1-2 minutes.
  5. Introduce the sliced chicken to the skillet and stir-fry for about 2 minutes, or until it is just cooked through.
  6. Add the prepared broccoli, sauce mixture, and water to the skillet. Stir well, allowing the sauce to thicken and evenly coat all the ingredients, about 1-2 minutes.
  7. Pour your Chicken Broccoli Stir Fry over rice or cauliflower rice and serve!
