Ingredients
  

For the Steaks
  • 2 steaks Ribeye or New York strip steaks (about 1.5 inches thick)
  • 2 tablespoons Olive oil for cooking
  • 1 teaspoon Salt to taste
  • 1 teaspoon Freshly ground black pepper to taste
For the Chimichurri Sauce
  • 1 cup Fresh parsley leaves
  • 4 cloves Garlic minced
  • 2 tablespoons Fresh oregano leaves or dried if fresh isn't available
  • 1/2 cup Extra virgin olive oil
  • 1/4 cup Red wine vinegar
  • 1 teaspoon Red pepper flakes optional
  • 1 teaspoon Salt to taste
  • 1 teaspoon Freshly ground black pepper to taste

Method
 

Cooking Steps
  1. Remove the steaks from the refrigerator 30-45 minutes before cooking to reach room temperature.
  2. In a medium bowl, combine the parsley, garlic, and oregano. Add olive oil, red wine vinegar, red pepper flakes, salt, and black pepper. Stir well and set aside.
  3. Pat the steaks dry and season both sides generously with salt and black pepper.
  4. Heat a cast-iron skillet over high heat for 3-5 minutes. Add olive oil and let shimmer.
  5. Sear the steaks for 3-4 minutes on each side for medium-rare.
  6. Transfer the cooked steaks to a cutting board and cover loosely with foil. Allow to rest for 5-10 minutes.
  7. Slice the steaks against the grain and drizzle with chimichurri sauce.
  8. Serve immediately with extra chimichurri sauce on the side.
