How to Make Chinese Chicken and Broccoli Stir Fry
  1. In a bowl, combine the chicken thighs with soy sauce, oyster sauce, rice wine, and cornstarch. Allow it to marinate for 5-10 minutes to absorb all those wonderful flavors.
  2. In a separate bowl, mix the remaining soy sauce, oyster sauce, and pepper powder. Set this mixture aside for later.
  3. Heat ½ tablespoon of oil in a non-stick pan over medium heat. Add the marinated chicken, frying until golden brown, then remove it from the pan and set aside.
  4. Bring a pot of water to a boil and add the broccoli. Cook according to your preferred texture—about 2-3 minutes for a crunchy bite. Drain well.
  5. In the same pan, heat 1 tablespoon of oil. Sauté the garlic and mushrooms until beautifully softened.
  6. Reintroduce the chicken and broccoli back into the pan. Pour in the prepared sauce, stirring until well combined. Let it sizzle for a minute before serving.
