Ingredients

For the Stew
  • 6 links Irish Pork Sausages Look for natural casing for authenticity.
  • 8 oz Thick-Cut Streaky Bacon Substitute with turkey bacon for a lighter dish.
  • 2 medium Onions Sauté gently to avoid bitterness.
  • 4 cups Potatoes Use waxy varieties to maintain shape.
  • 2 sprigs Fresh Thyme Dried thyme can be used as a substitute.
  • 1 cup Irish Stout or Mild Ale Optional for a richer stew.
  • 4 cups Stock or Water Using quality stock enhances taste.

Equipment

  • Heavy-bottomed pot

Method

Cooking Steps
  1. In a heavy-bottomed pot, cook the bacon and sausages over low heat until they are crispy and browned.
  2. Add the sliced onions to the pot, cooking them slowly on low heat until soft and sweet.
  3. Layer in the sliced potatoes and fresh thyme. Pour in the stout or ale (if using) and then add the stock or water.
  4. Cover and let the stew simmer gently for about 40-50 minutes, until the potatoes are tender but still intact.
  5. If your stew seems too thin, simmer uncovered to reduce it. Conversely, add more stock or water if it’s too thick.
