Preparation
  1. Preheat the oven to 325°F (162°C) and prepare a 9-inch square baking pan by lining it with aluminum foil and giving it a light greasing with cooking spray.
  2. Make the crust: Blend together the graham crackers, 2 tablespoons of sugar, and zesty lemon peel in your food processor until you achieve fine crumbs, then pour in the melted butter and mix until damp.
  3. Press the crust mixture firmly into the bottom of the prepared pan, smoothing it out evenly. Bake for about 10 minutes, or until light golden brown. Let it cool.
  4. Prepare the cheesecake filling: Blend cream cheese, room temperature eggs, extra lemon zest, lemon juice, and ½ cup sugar in the food processor until smooth.
