Instructions

  3. Bake for 30-35 minutes, until chicken is cooked through (internal temp of 165°F) and sweet potatoes are golden.
  4. Make the Greek Salad: Mix diced tomato, cucumber, and bell pepper in a bowl. Season with salt, drizzle olive oil, and toss with crumbled feta.
  5. Assemble Bowls: Slice the roasted chicken and arrange it atop sweet potatoes with the Greek salad and tzatziki on the side.
