  3. Sauté the onion in the remaining olive oil until it turns translucent, which should take approximately 2–3 minutes.
  4. Add garlic, red bell pepper, and zucchini, cooking until the veggies soften, around 3–4 minutes.
  5. Incorporate the fresh spinach, oregano, thyme, and red pepper flakes, stirring until the spinach wilts, about 1–2 minutes.
  6. Stir in the uncooked orzo, then pour in the chicken broth and fresh lemon juice, mixing everything together.
  7. Return the browned chicken to the skillet, ensuring it’s evenly distributed in the flavorful orzo mixture.
  8. Cover the skillet and bake in the preheated oven for 25–30 minutes, or until the orzo is tender and the liquid is mostly absorbed.
  9. Uncover and sprinkle feta cheese, parsley, and olives on top; bake uncovered for an additional 5 minutes, allowing the cheese to melt and flavors to meld.
