Ingredients
  

For the Pasta
  • 2 cups Short pasta (rotini or penne)
For the Cucumbers
  • 2 whole Cucumbers (English or Persian) Salt and drain to keep the salad from getting watery.
For the Onion
  • 1 medium Onion Soak in cold water to mellow sharpness.
For the Dressing
  • 1 cup Yogurt-based dressing Use vegan version if preferred.
Optional Add-ins
  • 1 cup Chopped bell peppers Adds color and crunch.
  • 1 cup Cherry tomatoes Adds sweetness.
  • 1/4 cup Fresh herbs (dill or parsley) Enhances flavor.

Method
 

Mixing Instructions
  1. In a mixing bowl, stir together all dressing ingredients until well-blended and creamy. Set aside.
  2. Place onion slices in a bowl of cold water for about 10 minutes.
  3. Boil pasta in salted water until al dente, about 7-10 minutes. Drain and rinse under cold water.
  4. Halve cucumbers lengthwise, scoop out seeds, and slice thinly.
  5. In a large serving bowl, combine cooled pasta, drained onions, cucumbers, and optional add-ins. Toss gently.
  6. Pour dressing over the pasta mixture and toss until well combined.
  7. Cover and chill in the refrigerator for at least 30 minutes.
