How to Make Italian Stuffed Zucchini
- Preheat the oven to 425°F (220°C). This ensures a perfectly cooked, golden result at the end.
- Prepare the zucchini by slicing each one in half lengthwise and scooping out the flesh to create boats. Set the scooped flesh aside for the filling.
- Cook the sausage in a skillet over medium heat until browned, about 5-7 minutes. Then, add the reserved zucchini flesh, couscous, canned tomatoes, salt, and pepper. Mix everything together until well combined.
- Stuff each zucchini boat generously with the savory filling. Place each stuffed zucchini in a baking dish, cut side up. Top with shredded cheese for that gooey finish.
- Cover the baking dish with foil and bake for approximately 25 minutes. Remove the foil during the last 5 minutes to allow the cheese to melt and become golden brown.
- Check for doneness by inserting a fork into the zucchini; it should be fork-tender, and the cheese should be beautifully bubbly and golden.
