- Season both sides of the pork chops generously with salt, pepper, and garlic powder.
- Heat oil in a heavy pan over medium-high heat until shimmering. Add the pork chops, searing for 5-6 minutes per side until golden brown.
- Without cleaning the pan, add diced apples, water, brown sugar, cinnamon, and lemon juice. Cook until apples are soft and sauce thickens, about 5-7 minutes.
- Plate the pork chops and spoon the warm apple sauce over them, optionally garnishing with fresh thyme.
