How to Make Parmesan Herb Roasted Acorn Squash
- Preheat your oven to 425°F (220°C). This temperature will help achieve that wonderfully crispy, golden crust on your squash.
- Trim both ends off the acorn squash, slice it in half, and scoop out the seeds.
- Cut each half into 1-inch thick slices.
- Combine the acorn squash slices with olive oil, Parmesan, garlic powder, salt, basil, thyme, and oregano in a large mixing bowl, and toss until well-coated.
- Arrange the squash slices on a parchment-lined baking tray; sprinkle any remaining herb mixture on top.
- Bake for 20 to 25 minutes, until the slices are soft and slightly golden.
- Transfer to a serving platter and enjoy warm.
