Preparation
  1. Sauté Shrimp: In a skillet, heat a splash of oil over medium heat. Add chopped shrimp and minced garlic, cooking until the shrimp turns pink and opaque, about 3-4 minutes.
  2. Mix Ingredients: In a mixing bowl, combine the cooked shrimp, creamy mashed potatoes, and freshly chopped herbs.
  3. Shape Croquettes: With clean hands, scoop the filling into equal portions and form small balls or patties, about 1½ inches in diameter.
  4. Coat Croquettes: Set up a dipping station with beaten egg and a plate of breadcrumbs. Dip each shaped croquette first into the egg, then roll in breadcrumbs.
  5. Fry Croquettes: Heat oil in a skillet over medium-high heat until shimmering. Carefully place the croquettes in the hot oil, frying until golden brown on each side, approximately 3-4 minutes.
  6. Drain: Use a slotted spoon to transfer the croquettes to a plate lined with paper towels.
