- Mash the banana in a mixing bowl until smooth and creamy.
- Add Greek yogurt to the mashed banana and whisk until well combined.
- Stir in protein powder and vanilla bean powder until fully blended.
- Add honey or maple syrup to taste and mix until sweetened to your liking.
- Layer 1/4 of the yogurt mixture in a glass, followed by sliced bananas and crushed vanilla wafers. Repeat layers until ingredients are used up.
- Chill the parfait in the refrigerator for at least 10 minutes.
- Serve immediately, keeping wafer cookies separate until serving for crunch.
