How to Make Protein Kodiak Cake Muffins
  1. Preheat the oven to 350°F (175°C). Prepare a muffin tin by lining it with muffin liners or lightly greasing it to prevent sticking.
  2. Mash 2 ripe bananas in a large mixing bowl until smooth.
  3. Combine 2 eggs, 1/3 cup milk, 1/4 cup maple syrup or honey, and 1 teaspoon vanilla extract into the mashed bananas. Whisk everything together until the mixture is smooth.
  4. Mix in 1 cup of Kodiak Cakes mix, 1/4 cup cocoa powder, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and a pinch of salt. Stir gently until just combined.
  5. Fold in 1/3 cup of chocolate chips.
  6. Divide the batter among the muffin cups, filling each about 3/4 full.
  7. Bake for 18–22 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
  8. Cool in the pan for 5 minutes, then transfer muffins to a wire rack to cool completely.
