  • 1 pound sausage Andouille or other smoked varieties

  • 1 cup long-grain white rice preferably for fluffy texture
  • 2 cups broth chicken or vegetable broth
For the Vegetables
  • 1 medium onion chopped
  • 1 medium bell pepper chopped, any color
  • 1 stalk celery chopped
  • 2 cloves garlic minced
  • 2 tablespoons green onions for garnish
For Seasoning
  • 1 tablespoon Cajun seasoning adjust according to heat preference

Preparation Steps
  1. Begin by chopping the onion, bell peppers, celery, and garlic. If using frozen shrimp, thaw them beforehand.
  2. Heat a large skillet over medium heat and cook the sausage until browned, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add the chopped onion, bell peppers, celery, and garlic. Cook until softened, about 4-5 minutes.
  4. Stir in the rice and Cajun seasoning, mixing well with the sautéed veggies. Pour in the broth and bring to a boil.
  5. Once boiling, reduce heat and add the shrimp. Cover and cook until rice is tender and shrimp are pink, about 20 minutes.
  6. Remove from heat, fluff rice gently with a fork, and stir in the cooked sausage. Top with green onions.
